The Rib is butchered to produce a 4.5kg French Trimmed carvery rib, which means it is easy to carve, and the meat will fall away from the bone.
This is full of flavour as it is cooked on the bone, and an impressive centrepiece for a dinner party.
Sourced from farms in the Scottish Highlands where cattle are raised especially for Allens of Mayfair.
